Cherry Tomato, Mascarpone and Grasshopper Pasta Sauce

01 In a large frying pan, heat the oil over a high heat. Once hot, add the grasshoppers, garlic and fresh tomatoes, canned tomatoes and tomato puree and fry for about 5 minutes until the garlic has browned and the tomatoes are sizzling.

02 Next, add this mixture to a food processor with the rest of the ingredients and whizz until smooth.

03 Pour the sauce into a pan over a low heat and bring back to a simmer before serving.

Ingredients

  • SERVES 2 - 3
  • 25ml/1fl oz/2tbsp rapeseed (canola) oil
  • 15 grasshoppers
  • 2 garlic cloves, diced
  • 200g/7oz cherry tomatoes
  • 200g/7oz canned chopped tomatoes
  • 1 tbsp tomato puree (paste)
  • 150g/5½oz/⅔ cup mascarpone cheese
  • 200ml/7fl oz/scant 1 cup double (heavy) cream
  • Salt and freshly ground black pepper, to taste

Packed full of fresh basil leaves, this creamy sauce is wonderful poured over freshly cooked pasta and topped with cheese.
