grasshopper stir-fry

recipe information

01 Soak grasshoppers in water for 20 mins then drain.

02 Heat oil in pan until bubbling. Add ginger, garlic and chilli flakes for 3 minutes.

03 Add grasshoppers, fry for another minute or two then set aside.

04 Add broccoli to the same pan with a splash of water to steam for 2-3 minutes, add snap peas and sweet chilli sauce with the lime juice and coriander. Fry for a further 2-3 minutes.

05 Re-add the grasshopper, garlic, chilli and ginger mix to the rest of the ingredients.

06 Top stir-fry with the toasted cashews.

Ingredients

  • 2 tbsp olive oil
  • 2.5cm piece of fresh ginger
  • 2 garlic, cloves
  • 1 tsp chilli flakes
  • 20g grasshoppers
  • 150g tender-stem broccoli
  • 150g sugar snap peas
  • 4 tbsp sweet chilli sauce
  • 1 lime, juice
  • handful of coriander leaves
  • toasted cashews, to serve

Grasshoppers are not only delicious they are also packed full of high quality nutrients. Grasshoppers are an excellent source of protein, fibre, Omegas 3&6, iron, calcium, Vit B12 plus many more micronutrients. This will elevate the nutritional good stuff in any plant-based dish.

Our favourite thing about this dish is it’s so simple and very quick. So making healthier choices with a busy schedule even easier. We think this is a dish for two, but hey who’s judging? You can eat the whole lot, completely guilt free. Or keep some for lunch the next day.
