Cricket Powder

Ingredients

  • 1 heaped tbsp cricket powder
  • 2 limes (inc zest)
  • 3 tbsp nut butter
  • 50g almonds
  • 100g dates
  • desiccated coconut (for garnishing)

Makes 12-15 energy balls

This simple recipe could give you that afternoon boost you need, without reaching for the nearest chocolate bar or bag of crisps…

01 – Put all the ingredients into a food processor or blender (apart from the desiccated coconut) and blitz until it’s a rough paste. If you don’t have a food processor, it’s possible to finely chop the ingredients, as the nut butter works well at sticking the mixture together.

02 – Roll the mixture into small balls, approximately 2cm in diameter and then cover them in desiccated coconut.

03 – Once all the balls are finished, put them in the fridge and leave them to set before tucking in.
